Here’s a behind-the-scenes look at what happens inside a Parker freeze dryer:
Step 1: Freezing
The journey starts with freezing. Your raw product—be it meat, fruit, or a prepared blend—is rapidly frozen at very low temperatures. This locks in structure, nutrients, and moisture in the form of ice. Quick and consistent freezing is critical, as it determines the texture and shelf life of the final product.
Step 2: Vacuum and Sublimation (Primary Drying)
Once frozen, the trays are loaded into the freeze-drying chamber. Inside, we lower the pressure to create a vacuum. This is where the magic of sublimation occurs—the ice skips the liquid phase and turns directly into vapor.

Step 3: Desorption (Secondary Drying)
Even after sublimation, a small amount of moisture remains. In this final phase, we gradually increase the temperature under continued vacuum conditions to drive off residual water molecules. The result? A crisp, shelf-stable product with 1–4% moisture content.
